Miso Eggplant

A recipe from Emily

So easy and quick. This is one of my favorite dinners!

Japanese Eggplant

4 Japanese eggplants (I’ve also used one large regular eggplant)
3 T red miso2
½ T sugar
3 T water

Stir miso, sugar and water to mix with eggplant. Pour over as stir frying.Top with roasted sesame seeds. Serve over rice.

    It sounds great, though I’m always scared to cook eggplant. I’ve had bad eggplant way too often.

    This sounds lovely … I love a simple recipe! I will have to make it sometime in the summer when my eggplant-hating husband is away and the beautiful little Japanese eggplants are sold at my favorite roadside produce stand!!
